Pork and Sauerkraut Casserole
You have to plan ahead to prepare this dish since it takes about 3 1/2 hours.
4 boneless, center-cut loin pork chops, about 1 1/2 inches thick
Flour
Salt and pepper
2 tablespoons olive oil
1 large can sauerkraut
1 large onion, sliced
1 apple, chopped
Fresh ground pepper
2 cloves garlic, minced
1/2 cup dry white wine
Preheat oven to 300°.
Mix together flour, salt, and pepper. Dredge pork chops in flour mixture. Sear in olive oil until brown, about 5 minutes per side. Place layer of sauerkraut in bottom of casserole, then layer of onions, layer of apples, and finally the pork chops. Sprinkle with fresh ground pepper and garlic. Add a second layer of each and finally the wine. Cover casserole and bake at 300° for 3 hours.
