Five Minute Salsa
5 large Roma tomatoes
2 tablespoons olive oil
1 jalapeno pepper, seeded
1 tablespoon lime juice
3 tablespoons roughly chopped onion
Cut the tomatoes in quarters lengthwise. Squeeze out juice and place in blender. Add the olive oil, jalapeno, lime juice, and onion. Pulse a few times for a chunkier salsa, or blend to desired consistency.
